The Elusive White Cake.

 

Designing a Cake particularly for a Wedding is both a daunting task and one that demands a realisation of the exacting standards of the couple to ensure accuracy and interpretation. As a Cake designer it is important to consider fashion, guests, venue as well as well as presentation. 

 

Rarely do I look at other peoples designs, but recently I have been looking at perhaps the ‘Higher profile’ Cake designers. I am concerned that there are so many ‘Collections’ usually the reveal of a bi-annual new design extravaganza of timeless classics and innovative ideas. So what is the etiquette? Particularly as Wedding dresses have a Spring and Autumn collection, so ‘when’ and for that matter ‘where’ do the new collections get shown, and do couples choose from cake collections or do they choose what ‘they’ want?

 

I have a set of new designs now, they bear no relation to any trend, but using the thought process of where many of ‘my’ couples choose their ceremony and reception I have ‘conjured up’ a selection of Cakes that would suit the occasions. I am, although struggling in one vital aspect, I am finding a signature or showpiece cake in ‘White’ almost impossible! Every white cake seems to have been done in every shape and form, I design coloured cakes, even if in delicate pastel shades… so why I am struggling.

 

Our heritage is white ‘Royal Iced’ Cakes. Most Wedding Dresses are Ivory, Cream and rarely white, bridesmaids are jewel like colours and often the rich colours are requested to be accents in a Vintage or Contemporary Cake design, so how come the ‘top designers’ all show white cakes and why (apart from I can only aspire to being well known) am I rarely ever asked for the white? Who has white cakes?

 

So my question and thought is simple. How do I present my ‘collection of cakes’ as online will do no justice and will my ‘collection’ be compromised if there is no white cake?

New beginnings

When I left for work on Monday morning having spent 3 days in Birmingham at the NEC I was highly charged and inspired to look at new designs and new techniques. I arrived in the dark to peer through the window of my studio to be faced with disaster! 2 years work and collection of every display cake moved from our former Green Street premises melted like soft iced cream on a hot day except the condensation had melted everything!!!

I opened the wheelie bin and one by one my work all ended in the blue plastic pit…as I picked up each melted and forlorn example I felt a pang of goodbye. Some specific designs had served us well, paid our wages and given many couples and families such utter pleasure and the celebrated cake dummies were trashed like broken egg shells and empty sugar sacks.

This  moment,  such a sad negative turned into the most amazing positive and I was flooded with new design ideas, colour schemes and inspiration. I conjured up ideas of wedding cakes with meadow flowers, baroque extravaganzas, baby cakes and birthdays so now I set to work and started scribbling!

The first is cupcake bouquets, making wonderful gifts instead of the usual boxes of cupcakes, an elegant wedding cake with clean lines and stylised anemones bringing colour and vibrance.

I also looked up the meanings of colours of Roses, most interesting when so many weddings have lavender/lilac roses which symbolises ‘love at first sight’! I also learn By mixing rose blooms of different colours, you can create a bouquet of emotions. For example, a bouquet of red and white roses would mean I love you intensely and my intentions are honourable yet many superstitions say red and white blooms are a sign of blood soaked wartime bandages!
